AD| This week is #NationalRiceWeek and I'm celebrating by sharing a dish I made recently. Check out my sweet and sour chicken with egg fried rice served in pineapple.    ⁣⁣⁣⁣
I used long grain rice for this particular recipe as it’s so versatile: ⁣⁣⁣⁣
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬- 𝐄𝐠𝐠 𝐟𝐫𝐢𝐞𝐝 𝐫𝐢𝐜𝐞 ⁣⁣⁣⁣
• 330g of white rice cooked ⁣⁣⁣⁣
• 4 spring onions finely chopped ⁣⁣⁣⁣
• 2 teaspoons  soya sauce ⁣⁣⁣⁣
• 2 tablespoon of vegetable oil ⁣⁣⁣⁣
• 1 teaspoon fish sauce ⁣⁣⁣⁣
• 1 teaspoon sesame seeds (for garnish) ⁣⁣⁣⁣
𝐈𝐧𝐬𝐭𝐫𝐮𝐜𝐭𝐢𝐨𝐧𝐬: ⁣⁣⁣
1. Precook white rice the night before.⁣⁣⁣⁣
2. Heat a tablespoon of vegetable oil and fry the egg until scrambled. ⁣⁣⁣⁣
3. Heat the other tablespoon of vegetable oil and add the pepper, salt, and spring onions and fry for 2 mins. ⁣⁣⁣⁣
4. Reduce the heat and add the rice and fish and soya sauce. Mix together until covered with the sauce.⁣⁣⁣⁣
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬 ⁣- 𝐒𝐰𝐞𝐞𝐭 𝐚𝐧𝐝 𝐬𝐨𝐮𝐫 𝐜𝐡𝐢𝐜𝐤𝐞𝐧 ⁣⁣⁣⁣
• 550g of chicken, chopped into cubes ⁣⁣⁣⁣
• 1 tablespoon soya sauce ⁣⁣⁣⁣
• 2 cups of corn flour⁣⁣⁣⁣
• 2 tablespoon caster sugar ⁣⁣⁣⁣
• 2 medium eggs 1 for rice ⁣⁣⁣⁣
• 1 pineapple chopped (keep the skin for decoration)⁣⁣⁣⁣
• 1 Red bell pepper, chopped into cubes⁣⁣⁣⁣
• 1 Green bell pepper, chopped into cubes ⁣⁣⁣⁣
•1 white onion, chopped into cubes ⁣⁣⁣⁣
• 1 cup vegetable oil, (some for frying) ⁣⁣⁣⁣
• 1 teaspoon garlic ⁣⁣⁣⁣
• 1 teaspoon rice vinegar ⁣⁣⁣⁣
• 3 tablespoons of ketchup ⁣⁣⁣⁣
𝐈𝐧𝐬𝐭𝐫𝐮𝐜𝐭𝐢𝐨𝐧𝐬 ⁣⁣⁣⁣
1. In a bowl, combine the chicken, soya sauce, corn flour 1/2 cup and egg and leave to marinate. ⁣⁣⁣⁣
2. Cut the pineapple in half and lengthwise and carefully cut cubes inside the fruit. Scoop the cubed pineapple and leave to cook later. ⁣⁣⁣⁣
3. Add oil to pan and leave to heat to 180 degrees.  You should add the remaining cup of the corn flour and add to begin to fry chicken for 4-5 minutes (until brown and golden). ⁣⁣⁣⁣
4. Fry red, green pepper with onion until sauté. ⁣⁣⁣⁣
5. Add garlic and ginger, then vinegar, sugar and ketchup. And stir.⁣⁣⁣⁣
6. Add pineapple and chicken and toss to coat with the sauce. ⁣⁣⁣⁣

Do you know that the Trevi Fountain is one of the oldest water sources in Rome? ⁣

Me neither.⁣

The fountain dates all the way back to ancient Roman times. The construction of the Aqua Virgo Aqueduct in 19 B.C. which provided water to the Roman baths and the fountains of central Rome! ⁣

We visited the Trevi Fountain on our last day and it was absolute bliss! I also learnt the reason behind the three coins 𝐢𝐧𝐭𝐨 𝐭𝐡𝐞 𝐓𝐫𝐞𝐯𝐢 𝐟𝐨𝐮𝐧𝐭𝐚𝐢𝐧. ⁣

Apparently if you throw a coin into the fountain....⁣

• The first coin guarantees your return to Rome 🇮🇹
• The second will ensure a new romance ❤ and,⁣
• The third will ensure the marriage💍. ⁣
